Last Friday we celebrated Josh’s birthday. We had kabobs on the grill and Levy and i grabbed a big mushroom - Laetiporus sulphureus or Chicken of the Woods - that he had noticed on a walk. I have used them a few times while on camping trips in salads, pasta sauces, and stir fry. Yes, i cook way better when camping than at home.  This one was a bit woody because it was so big and perhaps a bit too late in the season.
